Ingredients
- 2 3/4 cups all-purpose flour, divided
- 1 Tbs sugar
- 1 tsp salt
- 1 envelope dry yeast
- 1 cup warm water, (120° to 130°)
- 1 Tbs butter or margarine, softened
- 1/4 cup Thousand island salad dressing
- 4 slices Swiss cheese (or 6 oz shredded)
- 6 oz thinly sliced corned beef
- 1 cup sauerkraut, drained (The type in the bag is best)
- 1 egg white, beaten (optional)
Preparation
Step 1
1. Preheat oven to 400°F.
2. Combine 2¼ cups of the f lour, sugar, salt and yeast in a large mixing bowl and mix well. Stir in the warm water, butter and enough of the remaining flour to make a soft dough. Knead the dough on a lightly floured surface for 4 minutes. Roll into a 10x14-inch rectangle. Arrange the rectangle on a lightly greased 11x17-inch baking sheet.
3. Spread with the salad dressing. Layer the cheese, corned beef and sauerkraut over the salad dressing. Fold the sides to the center to enclose the filling and seal the edges. Brush with the egg white. Cut slits in the top.
4. Bake for 25 minutes or until golden brown. Cut into 6 slices.

I used a bread machine to do the dough, and kept adding flour. I estimate I used about 3 cups. I didn't have Thousand Island dressing, so I used 2T ketchup and 2T mayonnaise. I used no-salt butter, melted; reduced-fat swiss; and chopped sauerkraut from the bag.
