Ingredients
- 2 tsp olive oil
- 4 (1-inch thick) boneless, center-cut pork loin chops (1 1/2 lbs)
- 3/4 tsp salt
- 1/2 cup dark amber pure maple syrup
- 1/4 cup unsweetened apple juice
- 2 tbsp cider vinegar
- 1 1/2 tsp Dijon mustard

Preparation
Step 1
1. Heat oil in large skillet over medium-high heat. Sprinkle chops with 1/2 tsp salt and cook until lightly browned, about 3 minutes per side.
2. Add syrup, juice, vinegar, mustard, and remaining 1/4 tsp salt, and reduce heat to a simmer. Cook until chops are just cooked through, about 4 minutes (an instant thermometer reads 145F in center).
3. Transfer chops to a serving platter, increase heat to high, and cook sauce until slightly thickened and reduced to about 1/2 cup, about 5 minutes. Spoon sauce over chops.
