Ingredients

  • 1 lb ground round or ground chuck
  • 1 lb mild sausage (Bob Evans works great)
  • 1 small package Velveeta ($4.49)
  • 1 tbsp Olive Oil
  • 1 crushed garlic clove or can use a tsp or 2 of garlic from a jar
  • 1 lb package of Kraft Shredded Sharp Cheese
  • 1/4 cup finely chopped chives or green onions (can use more if desired)
  • 1 package Small Light Rye or Dark Rye Bread Squares (Pepperidge Farm)

Step 1

Chop green onions or chives and set aside. In a frying pan, on low heat, add olive oil and garlic to pan, then add ground round and sausage, cutting it in with a plastic or wooden spatula, raising heat to medium. Keep cutting up the meat until the meat is in small pieces and nearly cooked. Using a colander, drain the oil and grease from the meat, put back in frying pan. Then, add in whole package of Velveeta (cut in small pieces and add in so it melts easily). Stir until all the meat is coated in the Velveeta. Remove from heat when all is melted.

Next, place Rye Bread Squares on a cookie sheet. I used Pepperidge Farm Rye Bread Squares and the one loaf made about 36 to 40 hanky pankies. I used 2 cookie sheets. They can be lightly greased or nonstick. Using a soup spoon, spoon out the cheese/meat mixture onto each slice of the bread.
3Next, Sprinkle Shredded Cheese and Chives on top of the cheese/meat mixture on each Rye Bread Square.

4Preheat the oven to 350 degrees and then place cookie sheets into the oven on a center rack for about 8-12 minutes, depending on whether your oven is gas or electric. Gas seems to cook quickly. You can tell when they are done when the shredded cheese is melted and the bottom of the bread slices are crispy. If the center of the bread bottom seems moist, cook another minute or two. Look for browning around the edges. Watch carefully so they don't burn and then remove.

Place on serving platter with spatula and then enjoy! These should be served hot. Can be microwaved for 10 secs if they get cold. These go over great for my Superbowl Party!

If you are cutting calories, use ground Turkey instead of Beef/Pork, use Turkey Sausage, use low fat cheeses. Enjoy without guilt!
