Chocolate Matzo Pie – Family Favorite

My family requests this every year. Fresh eggs might be the safest since it is not cooked.

Ingredients

• 1 1/2 stick butter
• 2 eggs
• 1 cup sugar
• 3 tb cocoa
• 1/2 tsp rum
• 6 matzos crumbled up
• Sweet red wine

Preparation

Step 1

Put the matzo crumbled up into a bowl. Toss with the sweet red wine. Squeeze out extra wine once it has absorbed as much as it can.

Melt the butter.
Add sugar, cocoa and rum.
Mix until smooth. When cooled, add the eggs and mix. Take out a small portion of the mix and add it to the matzo. Pat the matzo mixture into a pie plate.
Pour the rest of the mixture over the top.
Chill and serve.
