Ingredients

  • ounces wasabi peas (about 3/4 cup)
  • Water/oil mixture
  • 4 (6-ounce) salmon fillets
  • Salt, to taste
  • 1 tablespoon grated lime peel

Preparation

Step 1

Preheat oven to 400 degrees. Process wasabi peas in a blender or food processer until coarsely ground. Lightly coat a baking sheet with water/oil mixture. Arrange salmon fillets, skin side down, on prepared baking sheet; sprinkle lightly with salt. Press ground wasabi peas into the top of the fillets, covering the tops completely, then sprinkle with lime peel. Roast salmon until opaque in the center, about 10 minutes.

SERVING SUGGESTION: Ginger-spiced brown rice and stir-fried zucchini and yellow squash.
