- SOUFFLES:
- 2 TBS sugar
- 8 oz bittersweet chocolate, finely chopped
- 1 TBS butter
- 1/3 cup milk
- 3 large eggs, yolks separated, at room temperature
- 1 large egg white, at room temperature
- 1/8 tsp cream of tartar
- 1/3 cup sugar
- TOPPING:
- 1 cup heavy cream
- 1/2 tsp vanilla extract
- 1 TBS confectioner's sugar

Step 1
CAKE:
1. Position a rack in the lower third of the oven and preheat to 375F. Butter ramekins and sprinkle with sugar.
2. Place the chocolate, butter, and milk in a large heat-proof bowl, then place the bowl in a large skillet of barely simmering water. Stir the mixture until the chocolate is melted and the consistency is smooth. Remove the bowl from the water bath and whisk in the egg yolks. Set aside.
3. In a medium bowl, beat the egg whites and cream of tartar on medium speed until soft peaks form. Gradually sprinkle in sugar and beat on high until whites are stiff but not dry. Fold 1/4 of the egg whites into the chocolate mixture, then fold in remaining egg whites.
4. Divide the mixture evenly among prepared ramekins, filling 3/4 full. Place ramekins on a cookie sheet. Bake until they rise and crack on top, so that a skewer inserted into the center emerges moist and gooey, about 14-16 minutes.
TOPPING:
1. Beat cream with vanilla and sugar until it holds a soft shape. Transfer to a serving bowl and refrigerate until ready to serve.
2. Remove souffles from the oven and serve immediately with powdered sugar sifted over the top. Add whipped topping.
Makes 8 servings (souffles). Each souffle = 11 Weight Watchers points.
