Ingredients
- 1/2 cup uncooked quinoa
- 1 1/2 cup egg whites or 8 large eggs
- 3 cloves of chopped garlic
- 1 tsp of thyme
- 2 cups of chopped baby spinach
- 1/2 cup of shredded mozzarella cheese
- 1 cup of milk
- 1/2 cup cottage cheese
- Salt and pepper to taste

Preparation: Preheat your oven to 350 degrees
Whisk egg, thyme, garlic, milk, cottage cheese, and quinoa, salt and pepper together. Then gently fold in spinach.
Pour mixture into an 8X8 baking dish sprayed with a non-stick cooking spray and cover with foil, bake for 45 minutes. Remove cover and sprinkle cheese on top, continue baking for another 10-15 minutes or until the cheese is golden on top.
