Barilla® Veggie Penne with Zucchini and Parmigiano Cheese

Ingredients

  • 1 box veggie penne
  • 1 bunch green onions cut on a bias into 1/2 inch pieces
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 4 tablespoons extra virgin olive oil
  • 2 small zucchini, sliced
  • 1 cup peas
  • 1 cup Parmigiano--Reggiano cheese, grated

Preparation

Step 1

1 Bring a large pot of water to a boil.
2 Sauté onions with olive oil in a large skillet until slightly caramelized.
3 Add zucchini to the skillet & sauté for 2 minutes.
4 Add peas and cook for 2 minutes.
5 Cook pasta 1 minute less than package directions. Drain & reserve ½ cup of the cooking water.
6 Add pasta and water to the skillet and cook 1 additional minute.
7 Toss with parsley & cheese then serve.
