Ingredients
- Olive Oil (2 T.)
- 1 clove Garlic - chopped
- 1/4 c. chopped onion
- 1/4 c. chopped celry (1/4" chop)
- 1/4 c. chopped bell pepper
- 1 28 oz. can diced tomatoes, drained
- 1/4 c. white wine
- 1/4 c. sliced Kalamata Olives (could use green olives)
- 2 tilapia filets

Preparation
Step 1
Heat oil in pan on Med heat.
Add garlic, onion, celery and pepper
Saute 3 minutes
Add tomatoes
Cook until Veggies are soft
Add olives
Lay fish on top and cover
Check in 3 minutes. Fish should cook through quickly. Could take 5 minutes.
Serve over rice
