Ingredients

  • 2 Tbsp. butter
  • 1 1/2 lbs. cubed boneless, skinless chicken breast or thighs
  • 1/4 cup Spinach & Herb Seasoning

  • 1 cup uncooked long grain rice
  • 10.5 oz. can chicken broth
  • 1 cup water
  • 2 cups fresh or frozen (thawed) broccoli florets
  • Salt & pepper to taste
  • Crumbled feta cheese for garnish

Preparation

Step 1

Heat butter over medium-high heat in a large skillet with a cover. Add chicken; sauté until chicken is no longer pink. Add next 5 ingredients; reduce heat, cover, and simmer for 15-20 minutes or until rice is tender. Season to taste with salt and pepper. Garnish with crumbled feta cheese.
