  • 8 TBS butter, softened at room temperature
  • 18 sugar cubes
  • 4 oranges
  • 1/4 cup Cointreau or other orange liquor
  • Zest of 1 orange

Preparation

Step 1

1. Rub all sides of sugar cubes on oranges to transfer orange oils to cubes; cubes should be bright orange.

2. Crush or crumble orange-infused sugar cubes into medium bowl.

2. Add softened butter to sugar in bowl. Using electric mixer at low speed, cream butter with orange-infused sugar until mixture is light and fluffy. Add orange liquor and zest; beat until well-blended.

3. Transfer butter to a sealable container and store in the refrigerator until needed. Can also freeze for up to 6 months.

Use butter to make Crepes Suzette or spread on English muffins or other breakfast breads.

Makes 8 servings (1 TBS each). Each serving = 4 Weight Watchers points.
