Italian Bread Salad

This is such and easy rustic Italian salad. Roasted Peppers, Capers, Salty Black Olive, Crusty Bread as well as
very colorful.

Ingredients

  • 3 Bell Peppers (Red Yellow, & Green)
  • 2 Cups of Cubed Italian/French Bread
  • 2 Tbsp of Capers
  • 1 tsp of Basil
  • 1/4 Olive Oil
  • 1/4 Cup Rough chopped Italian Parsely
  • 1 cup Black Olives
  • Salt and Pepper
  • Parmesan Cheese

Preparation

Step 1

Brush your peppers with Olive Oil and roast in a 350 degree oven for 45 min.
After the peppers have cooled remove the stem and seeds. Peel the skin off and slice into strips.

In a bowl, combine bell pepper strips with remaining ingredients and toss.

Be sure to season with salt and pepper and Parmesan cheese.

**Pull out your best olive oil for this one. The quality really shines through on this salad.
