Ingredients
- 3/4 c grated carrots
- 1/2 c cottage cheese
- (1/3 c whole wheat flour)
- 2 T finely chopped onion
- (1 t dried basil)
- 2 1/2 c cooked brown rice
- 8 oz tomato sauce
- 6 oz shredded cheese blend
- 3 oz feta cheese
- 8 oz sliced mushrooms
- 2 c grated carrots
- 1 lg cucumber, peeled, cubed
- (Olive oil)
- (Salt & pepper)
Preparation
Step 1
Preheat oven to 350º.
CRUST: In lg bowl combine cottage cheese, flour,
onions, ½ t basil, carrots & rice. Spray 13 x9” casserole
dish w/ non-stick spray. Spread crust ingredients in
bottom and up on sides about ¼ “. Bake for apx 25
min. Then broil for apx 2 more min (placing pizza 4”
from broiler.) Spread tomato sauce on crust. Top w/
cheese, feta & mushrooms. Sprinkle w/ remaining
basil. Bake for apx 15-20 more min until cheese is
bubbling.
In a bowl combine carrots & cucumber. Top w/ olive
oil & salt & pepper.
