BBQ Roasted Chicken & Parmesan Potatoes

Delicious and easy. I substituted the dressing listed for Sundried Tomato Vinegrette dressing and also marinated the chicken with it. really good, I'll make again.

Ingredients
- 1 lb. small red potatoes (about 8), quartered
- 1/4 cup KRAFT Italian Vinaigrette Dressing made with Extra Virgin Olive Oil
- 1-1/2 tsp. chili powder, divided
- 4 small boneless skinless chicken breast halves (1 lb.)
- 1/4 cup KRAFT Original Barbecue Sauce
- 2 Tbsp. KRAFT Grated Parmesan Cheese
Preparation
Step 1
HEAT oven to 400ºF.
TOSS potatoes with dressing in 13x9-inch nonstick pan; sprinkle with 1/2 tsp. chili powder. Bake 25 min.
STIR potatoes; push to sides of pan. Place chicken in single layer in center of pan; sprinkle with remaining chili powder. Drizzle with barbecue sauce.
BAKE 20 min. or until chicken is done (165ºF) and potatoes are tender. Transfer chicken to platter. Stir potatoes to evenly coat with pan drippings. Spoon around chicken on platter; top with Parmesan.

I would suggest cooking the potatoes a little longer. They were a little raw in the middle and I like mine softer. The chicken can out very juicy although I would add maybe 5 minutes to this cooking time as well.

Wonderful dinner idea! I sped up the cooking time by cooking both the potatoes and the chicken at the same time. Yummy mixture of flavors. This one is a keeper.
Chicken was a little tough but all had good flavor. Loved the potatoes. Used Hickory BBQ sauce, roasted red pepper dressing.
My family loved the potatoes, the chicken was a little dry but we slice our chicken breasts in half. Will make again

I marinated the chicken in Italian dressing also. I would wait to put the BBQ sauce on until it's almost cooked but other than that this was really good

This is easy to make. I had some precooked turkey breast that I used instead of the chicken but otherwise followed the recipe. It was a hit.

I thought this recipe was wonderful. not only was it tasty but very easy to prepare. My husband on the other hand didn't think as highly of it. I do recommend this recipe but because my hubby wasn't a big fan, I won't make it again.
