Ingredients

  • 4 Cups unbleached flour, white or whole wheat
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 Cups buttermilk (1 pint)

Step 1

Preheat oven to 425 degrees.

Coat small cooking sheet with softened butter. Sift flour, baking soda and salt in mixing bowl. With large wooden spoon gradually beat in the buttermilk until dough forms a ball.

Place dough on slightly floured board, flour hands. Shape dough into circular loaf approximately 8 inches across and 1 1/2 inch thick.

Flatten top slightly and make cross cut one half inch deep in top. Place loaf on buttered cookie sheet and bake for 25 minutes, then another 15 minutes at 350 degrees.

Serve hot with butter and jam.
