Baked Gnocchi with Greens

Ingredients

  • 17.5 ounce package gnocchi
  • 1 bunch chopped broccoli rabe, kale, mustard or collard greens (stems removed)
  • 1/2 cup chicken broth
  • 1/4 cup grated parmesan
  • 3 tablespoons olive oil
  • 1 grated garlic clove
  • Kosher salt and freshly ground pepper to taste
  • Aluminum foil

Preparation

Step 1

1. Rinse greens thoroughly and remove stems.
2. Chop greens.
3. Place in 1 1/2-quart baking dish.
4. Add one 17.5-ounce package gnocchi by lightly placing on top of greens. 5. Add 1/2 cup chicken broth evenly over dish.
6. Sprinkle 1/4 cup grated parmesan over dish.
7. Evenly distribute 1 grated garlic clove over dish.
8. Evenly distribute 3 tablespoons olive oil over dish.
9. Sprinkle salt and pepper to taste, over dish.
2. Loosely cover with foil and bake at 400 degrees F until gnocchi is cooked through, 30 minutes or so.
3. Uncover and sprinkle with more parmesan.
4. Broil until golden brown.
