Ingredients

  • 9 eggs, beaten
  • 2 TBS butter, melted
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 tsp Kosher salt
  • 2 TBS chopped green onions
  • 4 oz (1 cup) grated Pepper Jack cheese
  • 1 oz (1/4 cup) crumbled queso fresco cheese

Preparation

Step 1

1. Preheat oven to 350F.

2. In a large bowl, combine eggs, butter, sour cream, milk, salt, and green onions. Stir well and transfer to a buttered 9X13 casserole dish. Bake at 350F for 25 minutes.

3. Cover the casserole with Pepper Jack cheese and bake for 10-15 minutes longer, or until puffed and brown.

4. Remove from the oven and allow to cool for 5 minutes. Top with queso fresco cheese and serve immediately.

Makes 4 servings. Each serving = 11 Weight Watchers points.
