Ingredients

  • 1 # Ground Italian Sausage
  • 1 small yellow onion, diced
  • 4 cloves minced Garlic
  • 5 oz fresh Spinach
  • 16 oz Ricotta
  • 1 egg
  • 1/2 Cup Parmesan
  • Dash of Hot sauce
  • 2 Tsp Garlic Salt
  • Salt & pepper to taste
  • Olive oil
  • 1 qt Spaghetti sauce of your choice

Preparation

Step 1

Heat some olive oil in a skillet over medium heat. Add onions and saute until soft. Add Italian sausage, cook until no longer pink. Add minced garlic and cook for 1 minute more.
Mix ricotta, egg and about half of the fresh spinach, chopped. Add seasonings and hot sauce. Stuff the shells.
Spread half of the sauce on the bottom of the baking dish. Place the shells, layer more sauce. I put more fresh spinach on top. Sprinkled shaved Parmesan on it an baked until it looked done. Approx 30 minutes
Lol I guess I made it up as I put it together. I will say that maybe save some sauce for when you serve it. While cooking the dish absorbs a lot of the sauce, so I'd add more when serving so its not dry.
