Spicy Thai Basil Chicken

Ingredients
- 4 t canola oil
- 1/2 c minced shallots
- 1/2 c thinly sliced red pepper
- 4 t minced garlic
- 1 ib ground chicken
- 2 serrano or thai chilis
- 1 T fish sauce
- 2 t dark brown sugar
- 2 t soy sauce
- 1/4 t black pepper
- 1 c basil leaves
- 1 T lime juice
- 4 lime wedges

Preparation
Step 1
Heat skillet over med-high heat. Add 2 T of oil. Add shallots, saute 2 mins. Add red pepper, saute 1 minute. Add garlic, saute 30 secs. Remove mixture from the pan.
Add remaining2 t oil. Add chicken; cook 5 mins or until browned and crumbled. Drain well. Return chicken to pan. Add chilis, cook 1 minute. Stir in fish sauce and next 3 ingredients. Cook till heated. Stir in basil and juice.
