Ingredients

  • 3 T EVOO
  • 3 c chopped onion
  • 3/4 c diced carrot
  • 1/2 c diced celery
  • 1/4 c minced garlic
  • 3 T fresh oregano
  • 1/4 t crushed red pepper
  • 2 T tomato paste
  • 1/2 c cabernet
  • 5 1/2 lbs peeled and chopped
  • 3/4 c chopped fresh basil
  • 1 1/2 t salt
  • 1/2 t pepper

Preparation

Step 1

Heat large skillet, add oil. Add onion and next 5 ingredients, saute 8 mins. Add tomato paste; cook 2 minutes, stir frequently. Add wine, cook 2 minutes, until liquid almost evaporates.
Combine veggie mixture and tomatoes in slow cooker.
Cook low 8 hours. Blend mixture in blender . Return to crock-pot. Add basil, salt, pepper. Cook uncovered on High 30 minutes.
