BREAST****Taco Spice Chicken (ActiFry)

Ingredients

  • 8 ounces cubed boneless skinless chicken breast
  • generous pinch kosher salt
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1 tablespoons homemade taco spice mix (Taco Potion #19)
  • 1/4 teaspoon tomato paste

Preparation

Step 1

Combine the chicken breast with the olive oil, tomato paste, lime juice and taco spice mix in a zip-lock bag and allow to marinate in fridge for anywhere from 15 minutes to 3 days. (I marinated it on Sunday and served it on Wednesday)

Remove from the fridge 1 hour before cooking.

Place the chicken in its marinade in the Actifry bowl and set the machine for 10-12 minutes.

I served it with cilantro lime rice which was a very good fit (no cilantro for Dan) and squeeze a bit of extra lime juice over my serving only.

I bet it would also be good as part of a taco salad or in a tortilla wrap.
