Shrimp Scampi

Ingredients

  • 2 lbs shrimp, peeled & deveined, tails left on
  • Salt & freshly ground pepper
  • EVOO
  • 1 sm onion, thinly sliced
  • 2 T chopped garlic
  • 1 lemon, juiced
  • 1/2 c white wine
  • 1/2 c shrimp stock (see separate recipe)
  • 2 T cold butter
  • 2 T chopped parsley leaves
  • Lemon slices for garnish
  • Pasta or rice as an accompaniment

Preparation

Step 1

Season shrimp thoroughly with salt & pepper. Heat lg saute pan over med high heat. When pan is hot, add enough oil to lightly coat the pan. Add shrimp & quickly saute until just starting to turn pink, but not cooked through. Remove from pan & set aside.

Add onion to pan & saute just until they begin to soften, about 3 min. Add garlic & cook another 30 seconds. Add lemon juice, white wine & stock. Cook to reduce by 2/3, about 5 min. Add shrimp back to pan & swirl in butter. Finish with the parsley & check seasoning & add as needed.

Garnish with lemon slices & serve over rice or pasta.
