Kentucky Back Ribs

Ingredients

  • Marinade:
  • 4 lbs pork back ribs
  • 1 (12oz) bottle dark beer
  • 3/4 cup brown sugar
  • 1/2 cup cider vinegar
  • 1/2 Tbsp chili powder
  • 1/2 Tbsp dry mustard
  • 1 tsp salt
  • 1 tsp red hot pepper flakes
  • 3/4 cup ketchup

Preparation

Step 1

Place ribs in a large, shallow roasting pan.

In saucepan, combine beer, brown sugar, vinegar, chili powder, dry mustard, salt and hot pepper flakes.

Bring to a boil. Remove from heat. Cool to room temperature. Pour over the ribs.

Marinate 24 hours, refrigerated, turning once or twice.

Drain ribs. Boil marinade until reduced by half for glaze.

Arrange ribs on grill over hot coals, or in single layer in a baking pan. Grill over coals until tender.

Or cook at 350 until ribs are tender, 1-1 1/2 hours. Baste with marinade 4-5 times.

When meat is tender, blend ketchup with remaining marinade. Brush over ribs before serving.
