NUTTY GREEN BEANS

Ingredients

  • 1/2 cup red wine vinegar
  • 1 TBS sugar
  • table salt
  • 1/2 medium red onion, sliced thin
  • 1/2 cup pecans, roughly chopped
  • 1 lb green beans, ends trimmed
  • 2 tsp EVOO
  • 1 TBS minced fresh tarragon
  • ground black pepper

Preparation

Step 1

1. Bring vinegar, sugar and 1/4 tsp salt to boil in small saucepan over high heat. Add onion and return mixture to boil. Immediately remove pan from heat and transfer mixture to small bowl to cool.

2. Toast pecans in samll skillet over medium heat until golden brown and fragrant.

3. Meanwhile bring 2.5 qts of water to boil in a large saucepan. Add beans and 1 tsp salt and cook until tender, about 5". Drain beans and transfer to large serving bowl. Strain onions through sieve and discard liquid. Add onions, pecans, oils, and tarragon to bowl w/ beans and toss well. Season w/ salt and pepper to taste. Serve
