Ingredients

  • 3 cloves garlic, minced
  • 2 tbsp finely chopped rosemary
  • 1 tbsp fennel
  • Finely grated zest of 1 orange
  • 3 tbsp olive oil
  • Marinate
  • 1/3 cup maple syrup
  • 1/2 cup orange juice
  • 2 tbsp cider vinegar

Preparation

Step 1

Score fat on ham. Do not cut into meat
In a small bowl, mix garlic, rosemary fennel, orange zest, and oil
Rub past evenly over ham.
Cover with plastic wrap
REFRIGERATE OVERNIGHT
Remove ham. Place on rack in roasting pan.
LET SIT OUT FOR 2 HOURS BEFORE COOKING
In small saucepan, combine maple syrup, orange juice and vinegar.
Reduce to simmer and cook about 5 minutes.
ROASTER:
Bake 350 - 10 minutes per lb
Cook to 132 probe, 140 Rest
LET REST 30 MINUTES
OVEN:
Preheat over to 500
Bake ham in lower third of oven for 20 minutes.
Reduce heat to 325 and bake/baste with maple glaze. Rotate pan every 45 minutes.
Ham is done AT 132 PROBE, 140 REST
Let rest for 30 minutes before cutting.
