Ingredients
- Shrimp shells/ tails
- 1/4 c mushroom stems/trimmings
- 1/2 c chopped onion
- 1/4 c celery pieces & leaves
- 1/4 c carrot pieces
- 2 garlic cloves
- 1 lemon, sliced
- 1-2 bay leaves
- 1/8 t dried thyme
- 1/2 t black peppercorns
- 1/2 t shrimp or Cajun seasoning
- 6-8 c water

Preparation
Step 1
Bring to almost a boil. Reduce to low & simmer 45 min. to 1 hr. When completed, strain & immediately cool stock using an ice bath.
Use amount needed & refrigerate or freeze the rest.
