N** Homemade Creamy Polenta
Stovetop, oven or microwave
- 1 cup dried polenta
- 4 cups water (or stock)
- 1/2 teas. salt
Stovetop- Bring water to a boil. Slowly wisk in polenta in a thin stream. Cook over moderate head wisking for 2 minutes. Cover and reduce heat to simmer. Stir for 1 minute every 10 minutes for 45 minutes. Remove and serve.
Oven - Mix all ingredients in a shallow baking dish. Bake at 350 for 40 minutes. Remove and stir. Bake for another 10 minutes. Let stand for 5 minutes. You can add cheese, ect. at 10 minute mark.
Microwave - 3/4 cup polenta, 3 cups water, pinch of salt. Microwave for 8 minutes. Remove from oven & stir. Can cook for another 5 minutes depending on how thick you want it. Let sit for 5 minutes & serve.
