Ingredients

  • 2 4 oz cans green chiles
  • 1 lb shredded jack cheese
  • 4 egg yolks
  • 4 egg whites stiffly beaten
  • 2/3 cup evaporated milk
  • 1 tbsp flour
  • Salt, Pepper
  • Roasted red peppers, optional

Preparation

Step 1

Mix chiles and cheese, put in buttered casserole dish.
In separate bowl beat egg yolks, milk, flour and salt and pepper.
Fold beaten egg whites into yolk mixture. Pour over cheese.
Bake 30 minutes at 325 degrees.
Top with roasted peppers, bake an additional 30 minutes or knife comes out clean

(Bakes one hour total)
