Puffed Wild Rice

Ingredients

  • 4 oz wild rice
  • 1 1/4 cup 0.4º olive oil
  • salt

Preparation

Step 1

1. Use two pans and a colander to fry the rice. Put the oil in one of the pans and the colander in the other pan
2. Heat the oil until it is piping hot.
3. Fry the rice in small batches and as soon as it begins to puff up, strain in the colander in the empty pan.
4. Spread the rice over kitchen paper and season to taste with salt.
5. Repeat the operation until you have fried all the rice.
6. Serve the puffed rice in a bowl.
