Ingredients

  • 1 1 1 medium zucchini, made into “noodles”
  • 1 1 1 tomato, chopped
  • 2 2 2 cloves garlic, chopped
  • 1-2 1-2 1-2 tablespoons olive oil
  • 1 1 1 scallion, chopped
  • fresh cilantro, chopped
  • seasoning of your choice

Preparation

Step 1

Heat oil in a large frying pan. Add garlic, tomato, zucchini and seasoning. Cook about 5 minutes, then add scallion and cilantro and cook a few minutes more.

This recipe will serve 2 and can be easily doubled to feed the whole family.
