Ingredients
- 7 oz whole fried corn
- 1/2 cup sugar
- 1/4 cup water
- salt
Preparation
Step 1
1. Place the water and sugar in a pan and heat to 240 ºF (thread point).
2. Add the fried corn, remove from the heat and stir gently with a spatula until the sugar crystallizes and sticks and coats the fried corn.
3. Put the coated corn into the widest pan you have and heat the corn over a medium heat until it begins to caramelize and turns dark golden in color. Make sure that the grains do not stick together.
4. Spread the caramelized corn over a sheet of greaseproof paper so that it cools, making sure that you separate any grains that have stuck together.
5. Season the hot corn with salt.
6. Serve the caramelized corn in a bowl
