Broccoli Soup


Easy broccoli soup

  • 4 Tbl. butter
  • 1 chopped onion
  • 1 chopped carrot
  • 2 lbs.fresh chopped broccoli
  • 4 Tbls. flour
  • 6 cups chicken
  • 1/2 cup cream (don't use low fat)
  • salt and pepper



Step 1

Melt butter in a saucepan. Add onion and carrot and saute for 5 minutes until onions soften. Add chopped broccoliand 1/2 tsp. salt and 1/2 tsp. pepper. Saute for a 8 minutes or until vegetables break down and become translucent. Add the flour and stir for a minute or two. Slowly add the stock and bring to a slow boil.

Simmer uncovered for 40 minutes or until broccoli is very tender. Use a potato masher or an immersion blender topuree the soup.

salt and pepper if needed. Place lid on pot and serve hot.
