Family Friendly Crockpot Tamale Pie

This recipe came my way via a friend (Erin) from a game I play. It sounded so good and easy I knew I’d have to make it. Just one taste and it will be one of your family favorites too!

Ingredients

  • GARNISHES:
  • 1 onion
  • 1 pound meat (Ground beef, steak, whatever you prefer)
  • 1 teaspoon cumin
  • 1 tablespoon chili powder
  • 2 tomatoes, chopped (or 1 large can if you don’t have fresh)
  • 1 can whole kernel corn, drained
  • 1 can black beans, drained
  • 1 can enchilada sauce
  • 1/4 cup cilantro
  • Salt and pepper to taste
  • Salsa
  • Sour cream
  • Cheddar cheese

Preparation

Step 1

Saute the onions until transparent. Make sure to add salt and pepper to the onions. When done pour them into the crock pot.

Saute/brown meat. Add the seasonings to the meat. If using chunks of meat then just brown them. If you’re using ground then cook it through. Drain the fat from the meat and put it into the crock pot when it’s done.

Add the rest of the ingredients into a crock pot with the onion and meat. Place the crock pot on low and cook for as long as you need until dinner.

At this point in the recipe I diverged from what my friend does. She makes a cornbread batter and puts it into the crock the last hour of cooking then puts cheddar cheese on top of that for the last ten minutes.

I am sure it’s delicious that way but since I have picky kids I make the cornbread on the side and let those that want it on top to add it themselves.
