Grilled Beef Brisket

If want to cook for 4 hours, should have 1/2 inch of fat on top
If want to cook for longer than that, then should have 1/2 inch to 3/4
inch of fat on top
It was agreed that the meat should cook for at least 5 hours
At 2 hours, transfer the meat to an aluminum pan and leave on grill for
2 hours
Rest for 30 - 45 minutes

Ingredients

  • 10 - 12 lbs beef brisket
  • 1/2 cup garlic powder
  • 1/2 cup granulated onion
  • 1/2 cup black pepper
  • 2 bay leaves

Preparation

Step 1

1. Trim the excess fat off of the brisket.
2. Season brisket as desired. A mixture of 3/4 cup of chili powder, 1/2
cup of garlic powder, 1/2 cup of granulated onion, 1/2 cup of black
pepper and two bay leaves is a good combination.
3. Preheat grill.
4. Shut down half the grill. When cooking the brisket you do not want
to cook over direct heat. Place the brisket on the side of the grill
that is turned off. Turn the heated side of the grill to "Low".
Close the cover of the grill to retain the heat.
5. Grill the brisket for two and a half to three hours or until the
brisket's center reaches 140 degrees.
6. Remove the brisket from the grill. Wrap the brisket in aluminum
foil. Return the brisket to the non-heated part of the grill and
cook for another two and a half to three hours or until the center of
the brisket reaches 200 degrees. During this time rotate the brisket
evenly to get all sides by the heated part of the grill.
7. Remove the brisket and keep in the aluminum foil for 30 minutes to an
hour.
