Ingredients

  • 1 sweet potato
  • 8 oz cremini mushrooms, sliced
  • 2 T canola oil
  • 1/2 t liquid smoke
  • 1 1/2 t salt, divided
  • 8 oz quinoa elbow pasta
  • 1/4 C nondairy butter, softened
  • 1/4 t nutmeg
  • 1/2 t onion powder
  • 1 T fresh lemon juice
  • 1 C unsweetened almond milk
  • 1 T sriracha sauce
  • 8 oz nondairy cheddar cheese, shredded

Preparation

Step 1

1. Preheat oven to 400 degrees.
2. Cook potato in microwave.
3. In a mixing bowl toss together mushrooms, oil, liquid smoke and 1/2 t salt. Place on a foil-lined baking sheet and cook for 10 minutes, stirring once. Remove from oven and set aside.
4. Lower oven temp to 350 degrees.
5. Cook pasta according to package directions. Save 1/2 C pasta water.
6. Stir together sweet potato, pasta water, 1 t salt, butter and next six ingredients until smooth. Fold in pasta and mushrooms.
7. Place in 11 x 7 dish and bake 30 minutes.
8. Remove from oven and let sit 5 minutes
