Linguine with Shrimp and Langostino

Ingredients

  • 1/2 lb linguine pasta, broken in half
  • 2 Tbsp olive oil
  • 1/2 lb bacon, chopped
  • 1/2 sweet onion, chopped
  • 3 cloves garlic, minced
  • 1/2 tsp red pepper flakes
  • 1/2 c dry white wine
  • 1 lb uncooked med shrimp, peeled
  • 3/4 # langostino lobster
  • 1 c frozen peas
  • 1/2 c basil pesto sauce
  • 1/2 c half and half
  • Shredded Four Cheeses: Asiago, Fontina, Parmeson, Provolone

Preparation

Step 1

1. Bring a large pot of lightly salted water to a boil and cook linguine al dente, about 11 minutes. Drain well and set aside.

2. Heat olive oil in a large pan over medium-high heat, add bacon, onion and red pepper flakes and saute about 10 minutes. Add garlic and cook an additional 5 minutes, or until onion is golden.

3. Add white wine, cook and stir until wine is absorbed.

4. Add shrimp and langostino lobster, saute until shrimp is pink, 2-5 minutes.

5. Reduce heat to medium. Add linguine to shrimp mixture, then add peas, pesto sauce and half and half. Cook and stir until the liquid is absorbed, about 5 minutes.

Serve with freshly shredded cheese.
