Ingredients

  • ½

    lb linguine pasta, broken in half

  • 2

    Tbsp olive oil

  • ½

    lb bacon, chopped

  • ½

    sweet onion, chopped

  • 3

    cloves garlic, minced

  • ½

    tsp red pepper flakes

  • ½

    c dry white wine

  • 1

    lb uncooked med shrimp, peeled

  • ¾

    # langostino lobster

  • 1

    c frozen peas

  • ½

    c basil pesto sauce

  • ½

    c half and half

  • Shredded Four Cheeses: Asiago, Fontina, Parmeson, Provolone

Directions

1. Bring a large pot of lightly salted water to a boil and cook linguine al dente, about 11 minutes. Drain well and set aside. 2. Heat olive oil in a large pan over medium-high heat, add bacon, onion and red pepper flakes and saute about 10 minutes. Add garlic and cook an additional 5 minutes, or until onion is golden. 3. Add white wine, cook and stir until wine is absorbed. 4. Add shrimp and langostino lobster, saute until shrimp is pink, 2-5 minutes. 5. Reduce heat to medium. Add linguine to shrimp mixture, then add peas, pesto sauce and half and half. Cook and stir until the liquid is absorbed, about 5 minutes. Serve with freshly shredded cheese.
