Chicken Enchiladas

Ingredients

  • 3-4 cooked boneless chicken breasts (shred or cut into small pieces)
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 16 oz sour cream
  • salsa or chopped green chilis to taste
  • 1 can refried beans (optional)
  • soft tortilla shells
  • mozzarella cheese

Preparation

Step 1

Preheat oven at 350 degrees. Mix all soups, sour cream, salsa or green chilis and chicken together to make the sauce.

Get a glass 13x9 and spray with nonstick spray.

Next, take a tortilla, then use a rubber spatula to smear refried beans on the tortilla, add a spoon full of sauce, roll together and place in the pan seam down. Continue until all the ingredients are gone. Then use the rest of the sauce to spread all over the top of the tortillas, then spread a bag of mozzarella cheese over the top.

Bake at 350 degrees for 25 minutes or until brown and bubbly.
