Ingredients
- 1/2 cup vinegar (good balsamic)
- 1/2 cup evoo (higher quality)
- 1 tsp dijon or honey mustard
- s/p
- 1 to 2 fresh herbs, if desired (rosemary, basil, chopped)

whisk evoo into vinegar. add mustard. season with pinch of s and p. add herbs, if desired.
