Steak Diane

Ingredients

  • 4 boneless sirloin steaks
  • 1/4 cup chives
  • 1/2 cup butter or margarine
  • 3 tablespoons Worcestershire sauce
  • 1 teaspoon lemon juice
  • salt and pepper
  • 4 cups cooked rice

Preparation

Step 1

Pound steaks with flat side of mallet until thin (1/2" to 3/4" thick). Cook chives in 4 tablespoons butter for about 1 minute. Add Worcestershire sauce and lemon juice. Heat to bubbling hot. Heat remaining butter in skillet until lightly browned. Add steaks and cook 3 minutes. Turn and cook 2 to 3 minutes longer, or to desired doneness. Sprinkle with salt and pepper. Pour sauce over steaks and rice. Garnish with fresh parsley.
