Snow Pudding

Ingredients

  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • 1 cup hot water
  • 1 lemon juice of
  • 1/2 cup sugar
  • 1 egg separated
  • SAUCE
  • 1/4 cup sugar
  • 1/2 teaspoon cornstarch
  • 1 cup milk
  • 1/2 teaspoon vanilla
  • pinch salt

Preparation

Step 1

Soak gelatin in the cold water for 5 minutes. Add the boiling water and sugar; stir until dissolved. Add strained lemon juice: chill until it begins to harden. Meanwhile, beat egg white to a stiff froth; add to lemon mixture. Beat the whole until spongy; chill until hard. Serve with thin custard sauce made as follows:
Beat egg yolk, sugar, and cornstarch.
Scald 1 cup milk, and turn into egg mixture.
Heat until it thickens, stirring constantly.
Add vanilla and salt, and let cool.
