My Khalua Cupcakes

I made these for my cake decorating class. I made a filling of yogurt cheese, powdered sugar and Irish Cream to fill them. I had intended to add Khalua to the icing before decorating the cakes but forgot.

The home ground flour gave these a great flavor.

Ingredients

  • 3 cups home ground flour (soft wheat)
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup butter, softened
  • 1/3 cup vegetable oil
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 1/2 teaspoons pure vanilla extract
  • 3/4 cup milk
  • 1/4 cup Khalua
  • 2 teaspoons espresso powder

Preparation

Step 1

Preheat oven to 350 degrees. Mix together flour, baking powder, salt and espresso powder; set aside. Cream butter, vegetable oil and sugar together until light. Add eggs and vanilla to creamed mixture and beat until thoroughly mixed. Add flour mixture to creamed mixture alternately with milk and Khalua, beating well after each addition. Continue beating one minute. Pour into prepared pans, filling cups about 2/3 full. Bake 20-25 minutes or until toothpick inserted comes out clean.
