Ingredients

  • 2 cups mashed potatoes (5 to 6 medium potatoes)
  • 1 cup flour
  • 2 teaspoons baking powder
  • 2 eggs slightly beaten
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • hot vegetable oil

Preparation

Step 1

Combine first 6 ingredients, stirring well; chill 1 hour. Drop by heaping teaspoonful into oil heated to 375-390 degrees. Cook until golden brown; drain on paper towels.
