Potato Dumplings

Ingredients

  • 2 1/2 pounds potatoes boiled in skins
  • 1 slice bread cubed and fried
  • 1 egg beaten
  • flour

Preparation

Step 1

Peel boiled potatoes when soft, but not falling apart. Rice and spread to dry (in the morning). Late in the afternoon place potatoes in a bowl; salt to taste and cover generously with flour. Add the egg. Mix in additional flour until almost dry. Make into balls with a bread square in the center of each ball. Roll the balls in flour. Drop into boiling salted water. Boil 20 minutes. They may need some nudging to rise to the surface.
