Ingredients
- 1 prepared graham cracker crust
- 1/3 cup sugar
- 3 egg yolks
- 1 1/2 teaspoons lime zest grated
- 1 14 ounce can sweetened condensed milk
- 2/3 cup Key lime juice (fresh or bottled)
- whipped cream
Preparation
Step 1
1. Bake graham cracker crust according to package directions.
2. Using electric mixer, beat egg yolks and lime zest at high speed until very shiny, about 5 minutes. Gradually add condensed milk, and continue to beat until thick, about 3 to 4 minutes. Reduce speed of mixer to low. Add lime juice and mix just until combined.
3. Pour lime mixture into crust. Bake at 350 degrees until filling has just set, about 10 minutes. Cool to room temperature, then refrigerate.
4. Cut into wedges and serve with a large dollop of whipped cream.
