Golden Puffs of Sole

Ingredients

  • 1 pound sole fillets
  • 2 eggs separated
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 1/2 cup olive oil

Preparation

Step 1

Cut fish into pieces about 4x3" each. Beat the egg whites until stiff; set aside. Beat the egg yolks until thick. Stir flour and salt unto yolk mixture. Fold in the stiffly-beaten egg whites until well blended. In the meantime, heat olive oil in skillet until bubbles form around the edges of the pan. Dip each piece of fish into the batter, covering completely. Cook until both sides are golden brown. Drain on paper towels. Serve at once with lemon wedges.
