Beef with Snow Peas

Ingredients

  • 454 g (1 pound) boneless sirloin
  • steak, cut 2 cm (3/4 inch) thick 45 mL
  • (3 tablespoons) soy sauce
  • 30 mL (2 tablespoons) dry sherry
  • 15 mL (1 tablespoon) rice wine vinegar
  • 30 mL (2 tablespoons) packed brown sugar
  • 1 large clove garlic, minced
  • 10 mL (2 teaspoons) cornstarch
  • 45 mL (3 tablespoons) oil, divided
  • 1 - 227 g (8 ounce) package Campbell's fresh mushrooms, sliced
  • 250 mL (1 cup) sliced celery
  • 250 mL (1 cup) red pepper, cut in squares
  • 250 mL (1 cup) snow peas, cut in half lengthwise

Preparation

Step 1

1. Freeze meat 1 h. to firm for easier slicing; slice across the grain into very thin strips.

2. Combine next six ingredients in a cup; set aside.

3. Saute mushrooms in 15 mL (1 tablespoon) hot oil until tender and liquid has evaporated; remove and set aside.

4. Heat remaining oil and stir-fry meat until colour just changes, stirring constantly; push to one side, add celery and red pepper and stir-fry until tender-crisp; stir in snow peas and cook 1 min.

5. Stir in soy sauce mixture and cook until thickened and bubbly; add mushrooms; heat through.

Variations:
Shiitake Mushroom: Substitute 1 - 113 g (4 ounce) package Campbell's fresh Shiitake mushrooms for white mushrooms; trim any woody portions from stems and discard, cut any large mushrooms in half.
Oyster mushroom: Substitute 1 - 113 g (4 ounce) package Campbell's fresh Oyster mushrooms for white mushrooms; cut any large mushrooms in half.
