Ingredients

  • 3-1/2 c. thinly sliced cucumbers (about 1 lb.)
  • 1 medium onion, thinly sliced and separated into rings
  • 2 jalapeno peppers, thinly sliced
  • 3 large garlic cloves, minced
  • 1 c. white vinegar
  • 2 Tbls. water
  • 1 c. sugar
  • 1 Tbls. salt

Preparation

Step 1

Combine in large glass jar:
3-1/2 c. thinly sliced cucumbers (about 1 lb.)
1 medium onion, thinly sliced and separated into rings
2 jalapeno peppers, thinly sliced
3 large garlic cloves, minced
Mix together in sauce pan and bring to boil until sugar dissolved:
1 c. white vinegar
2 Tbls. water
1 c. sugar
1 Tbls. salt
Pour liquid over cucumber mixture. Let cool, cover and chill 48 hours. Spoon into pint canning jars or plastic freezer bags, leaving half-inch head room, and seal, label and freeze for up to 6 months. Thaw in refrigerator before serving and once open use within a week.
