Ingredients
- 4 green chiilis
- 3 eggs, slightly beaten
- 1 lb Monterey jack cheese
- 1/2 tsp flour
- salt to taste
- 3-4 tbs oil
Preparation
Step 1
1) toast chilies on hot griddle, cool on plate.
remove skin, but keep stem. slit down center.
2) stuff with Monterey jack strips.
3) mix eggs, salt, flour (to make medium thin batter)
dip chilies in batter, then deep fry in heated skillet.
4) can be kept warm in foil covered dish in warm oven.
