Ingredients
- 1 egg
- 3/4 cup dried Italian-style bread crumbs
- 6 boneless, skinless chicken breasts (5-6 oz each)
- 1 tablespoon olive oil
- 1 jar (10.5 oz) marinara sauce
- 1/4 cup grated Parmesan cheese
- 6 slices part-skim mozzarella cheese
Preparation
Step 1
1. Beat egg in a shallow bowl. Place bread crumbs in another shallow bowl. Dip chicken breasts into egg and then dip into bread crumbs, using spoon to lightly coat meat with crumbs on all sides.
2. Heat oil in a large skillet over medium heat. Saute chicken on both sides until just browned, 2 to 3 minutes.
3. Place chicken in single layer in 6-quart or larger slow cooker. Pour sauce on top. Cover. Cook on low 5 to 6 hours, or until chicken is tender and cooked through. Sprinkle with Parmesan and top each breast with 1 slice of the mozzarella. Cover and cook 15 more minuted, or until cheese is melted.
